Kombucha and jun are ancient and spontaneous cultures used to make fermented tea (their origin is a complete mystery!). We'll discuss brewing, judging fermentation doneness, SCOBY hotels, sharing SCOBYS, flavoring to build natural carbonation, as well as each step of the process with sensory tips and tricks along the way. Sip on samples of kombucha and jun during the discussion, then choose your SCOBY (the starter culture). In true hands-on fashion, you get to flavor your own brew using seasonal juices and botanicals for a custom blend to take home and enjoy.
